I’m waiting on a call from a mom in early labour. So it seemed like a good time to whip up a batch of energy balls. Or as I like to call them, “energy bombs”. I stick these in the freezer and love to grab one or two as I head out to teach a yoga class, or anytime I’m short on time but need a boost.
These are also a great thing to make ahead during your pregnancy and keep in your freezer for your postpartum days. It can be so hard to prep even a simple meal or snack in those early days after baby arrives. These are a no-brainer, giving you fiber, protein, and a hit of energy to keep your blood sugar up.
There’s no exact science to it, which makes it all the more fun. You need a base of sticky (nut butter, or dates pulverized in the food processor) and something to hold it together (oats, or I like chick pea flour for added protein). Then add in whatever you want that’s sweet or crunchy.
Some other things you might toss in:
- honey
- chocolate chips
- almond butter
- sesame seeds
- goji berries
- maple syrup
- tahini
These ones are a base of ground dates and chick pea flour, with raw cocao, cocao nibs, hemp seed, a little kick of cayenne and cinnamon, and then rolled in shredded coconut. Pulse it all in the food processor til you get a texture like cookie dough. Roll them into balls about one tablespoon in size and freeze to firm them up. Yum!
